Plant food poisoning containing nitrites

Internal Medicine / Pediatrics

Enterogenous cyanosis is nitrite poisoning caused by eating vegetables containing high levels of nitrates, bitter well water, and steamer water. It can also occur when, during gastrointestinal dysfunction, nitrate-reducing bacteria proliferate in large numbers in the gastrointestinal tract, and after ingesting vegetables rich in nitrates, the nitrates are reduced to nitrites in the body, causing nitrite poisoning. Nitrite poisoning from plant foods is more common in children. The toxic dose of nitrite is 0.2-0.5 grams, and the lethal dose is 3 grams.
